/Quinoa Tabbouleh
1 bunch fresh parsley chopped (can be replaced with cilantro)
1 bunch fresh mint chopped
1 green onion chopped
1 tomato diced
½ cup cooked quinoa
Dressing
2 Tbsp olive oil
1/8 cup lemon juice (or more to taste)
1 garlic clove minced
Instructions
Mix all ingredients togethe. Enjoy!)
