/Carrot Apricot Dip
Ingredients
½ cup carrot juice
2 medium carrots peeled and chopped
½ cup cashews
5 dried apricots (more or less)
1 tsp curry powder
Pinch of salt to taste
Instructions
Place all ingredients in food processor and blend until smooth.
Refrigerate for up to 1 week.
